Ana María Romero Mena is founder and Director of “Wine and Training”, currently known as “Creativa Sensorial”, a consulting agency that focuses on the application of sensory evaluation for tequila, wine and gastronomy industries. She began her studies at the University of the Americas in Business Administration, and obtained her specialty in wine and sensory evaluation at the University of Davis.
Due to her love of beverages, Ana decided to research the origin of the aromas found in tequila and its application to tasting; the resulting thesis was presented before members of the National Chamber of the Tequila Industry and the Tequila Regulatory Council in 1998.
Ana designed a valuable tool to help learn the descriptors of tequila, "Los Aromas del Tequila", a kit with 50 essences that contains all the aromas of the process and aging.
Ana has taught numerous seminars and formed panels of tasters for leading companies such as: Casa Herradura, Cazadores, Sauza Tequila, La Madrileña, Tequila 7 Leguas, San Matías, Don Julio Tequila, Cuervo House, Arette Tequila, Mexican Tequila Academy, El Tequileño, Tequila Regulatory Council and National Chamber of the Tequila Industry.

Maestra Tequilera Ana Maria Romero of award-winning Corrido Tequila will share her mastery of tequila tasting, blending and pairing alongside the culinary creations of Chef James Porter. Just as complex as wine, sipping and cooking with tequila is an adventure unto itself. Chef Porter’s award-winning background in French Cuisine translates seamlessly into a master course of tequila and food, and using this centuries old libation as an ingredient in all of the course dishes.
