Each of our scheduled courses consists of multiple classes focusing on the fundamental techniques of the course topic.  Classes are informative and fun – and the results are always delicious.

Chef James Porter, or other scheduled Chef, will guide guests through the wonderful world of cooking, many times starting from the fields and garden just steps outside the manor. We provide all the tools, recipes, and creativity you’ll need, just bring your enthusiasm and willingness to learn and explore!

Edible delicacies abound well before the summer harvest season sets in. This late spring course highlights the elegant flavors of freshly emerged shoots, flowers and baby vegetables. Herbs and stems will also be featured as exquisite complements to every meal. Rose, Viognier and White Burgundy will be featured.

We only grow and serve the best ingredients, now it’s time to prepare them. Using a multitude of the same ingredients, Chef James Porter will teach how flavors change and evolve with three different temperature preparations. This nuts and bolts course will lead every guest to a variety of textures, flavors and techniques.

and TERRA Farmer Jeffrey will show off the abundance of autumn beginning with guest daybreak garden harvests. Inspired by the morning yield, Chef Porter will plan the menu and classes that day. Cooking classes will highlight the special characteristics of each ingredient in appetizer, main and dessert courses.

Chef Porter’s award-winning background in French Cuisine translates seamlessly into a master course of tequila and food, and using this centuries old libation as an ingredient in all of the course dishes.
